Spaghetti with Jyoshu Jibier Gunma Nihonjika Meat Sauce
Hotel Metropolitan Takasaki has launched ‘Spaghetti with meat sauce of Jyoshu gibier Gunma-grown Japanese deer’ on 1 February 2025 (Saturday).
Hotel Metropolitan Takasaki endorses the aims of the Minowa Ghibier Consortium and has provided recipes for gibier menus for restaurants and cooperated in the management of tasting events since last year. The aim is to make Gunma Prefecture’s gibier (Jyoshu gibier) more widely available to the general public and to utilise the gibier of deer captured as harmful birds and animals that cause damage to crops.
Minowa Ghibier Consortium.
A consortium (business consortium) set up by Takasaki City, Midori City and Minowa Foods Co. The aim of the consortium is to ensure the hygienic treatment of wild game caught in Gunma Prefecture and the stable supply and distribution of safe, secure and high-quality Gunma-grown gibier.
Lunch buffet with choice of main dish
You can choose your main dish and enjoy hors d’oeuvres, salad, soup and soft drinks buffet-style. After lunch, a dessert is included in the buffet price.
Ghibier
Ghibier is the meat of wild birds and animals that have been captured. It is derived from the French word ‘gibier’, where gibier has been popular since ancient times. In recent years, gibier cuisine has been featured on TV and other media, and regional brands of gibier are gaining in reputation, and attention to gibier is increasing. The meat of wild birds and beasts, whose legs and backs have been trained by running around in the fields and mountains, is blessed with high nutritional value – high in protein and low in fat – and is popular with health-conscious people and those with a strong sense of beauty. Note that although deer and wild boar are well known as gibier, only Japanese deer are currently sold as edible gibier in Gunma Prefecture.
